The patented processing technology of Counter Current Extraction (CCE) diffuses soluble solids from the fruits or vegetables being processed. The technical theme for the company is separation and recombination.
The central technical objectives of the process have been proven to show an increased yield, as well as an improved nutritional profile and overall quality of the products.
The diffused soluble solids are captured as a ‘whole juice’ containing almost the same characteristics as the raw product. As well as specialty juices, the technology is used to produce infused soft dried fruits, fibres and bioactives.
Infused soft dried fruits are made by replacing the diffused compounds with a range of sweeteners and bio-active compounds to meet customers’ preference. The infused fruit or vegetable is then dried to a suitable moisture level for shelf stability for use as a snack, or in bakery and cereal based products.
